DIY guide on how to poach an egg

Poaching an egg may sound like an easy task. After all, you just drop it in some hot water and leave it until it forms a firm shape, don’t you? You could try that, but the chances are you would end up with a soggy mess, spread all over the pan or something so hard it resembles a bullet.

There is a way of making the perfectly poached egg and we are going to look at how you do it.

  1. Find a fresh egg. Not only will it taste better but the fresher the egg, the thicker the white hence the shape will hold better. Not sure how old your egg is? A fresh egg will sink to the bottom in a glass of water. If it’s floating or standing on its end, get another one as it is not fresh.
  2. Crack your egg into a cup or small bowl. If any shell falls in, remove it. Put to one side.
  3. Fill a pan with water at least 5cm deep. If you are in a rush, fill with boiling water from the kettle. Don’t add salt but you can add a little vinegar. Why add vinegar? The egg white is mainly made up of protein and so will begin to set as soon as it hits the hot water. The yolk takes longer as the white is surrounding it. By adding vinegar, the white of the egg becomes firmer faster and stops it breaking up in the water.
  4. Bring the water back to the boil. Stir the water gently to create a whirlpool in the center.
  5. The water should now be bubbling gently. Gently tip the egg into the center and keep the water rolling softly around the egg. Don’t have it boiling fast or the egg will break up.
  6. Leave the egg in the water for 3-4 minutes to cook.
  7. When the white is set, you can lift the egg out. Do this using a slotted spoon and drain it on kitchen paper. If there are straggly bits of white, trim them off.
  8. Ready to eat. Your egg is now cooked. If you want the yolk firmer, leave for a little longer but most people like the center soft.

Cooking more than one poached egg

If you want to cook more than one poached egg i.e. maybe two, you can use the method above. Lower both eggs into the water separately. Cook for two minutes and then leave to stand in the hot water for 8-10 minutes.

Now you should have two perfect poached eggs, ready to lift out and serve.

How to serve

Eat with toast or bread and butter plus salt and pepper. If you want to be more adventurous, try this:

  • Put your poached egg in a bun with bacon or a beef burger.
  • Serve on top of toast smothered in mashed avocado with a little lemon, salt and pepper.
  • Top your spaghetti and sauce of your choice with a hot poached egg.
